Hot Fudge Sauce Made with Cocoa

If you are using good cocoa—and yes, there is quite a difference in cocoas—this is excellent.

It’s easy.   Be sure to mix the cocoa and granulated sugar together before cooking to eliminate any lumps and make a smooth sauce.

Quality cocoa is critical to this recipe. We used Ramstadt Breda Rich Dark Cocoa with three times the amount of cocoa butter of most store brands.

We made this both with 2/3 cup and 3/4 cup cocoa. Both work. Of course, you get a little deeper flavor with 3/4 cup cocoa.

As with other hot fudge sauces, this thickens as it cools. You can rewarm it in the microwave. You can also thin your sauce with additional cream.

2/3 cup Ramstadt Breda Rich Dark Cocoa or equal
1 cup granulated sugar
1/2 cup butter
1 cup heavy cream
1 teaspoon vanilla

Directions

Mix the cocoa and sugar together in a small bowl. Melt the butter in the microwave.

Add the cocoa and sugar mixture to a small saucepan. Add the melted butter and cream. Heat, stirring constantly with a wire whisk, until the ganache starts to bubble. Remove from the heat.

Let the ganache cool until it reaches the desired consistency. Thin with additional cream if necessary.

On a hot summer evening, ice cream sundaes are terrific. Fudge makes them even better. Roasted peanuts, peanut butter, and fudge make them better yet. Here’s how to make them.

Peanut Butter Fudge Sundaes

This is simple to make and a great dessert anytime. It’s simply sundaes made with peanut butter fudge sauce and topped with chopped peanuts. Of course, you could indulge and add some whipped cream.

Super Easy Peanut Butter Fudge Sauce Recipe

1 cup semi-sweet chocolate chips
3/4 cup evaporated milk
1/2 cup marshmallow cream
1/2 cup peanut butter made from 100% peanuts

In small, microwave-safe bowl heat the chocolate chips until melted, stirring as needed. In a cup, heat the evaporated milk in the microwave until hot. Add the evaporated milk to the chocolate and stir. Add the peanut butter and marshmallow cream. Beat with an electric mixer until smooth.

To make the sundaes, place ice cream in a chilled dish. Pour hot sauce over the ice cream. Top with chopped peanuts and whipped cream or a cherry if desired.

Tin Roof Hot Fudge Sundae

There are tin roof sundae ice creams, tin roof sundae pies, tin roof sundae cakes, and of course—tin roof hot fudge sundaes. Of course, there are many recipes. What they seem to have in common is peanuts and chocolate. This sundae is made with peanuts, hot fudge sauce, and peanut butter sauce, then topped with whipped cream, peanuts, and a cherry. It makes a handsome sundae but it is even better tasting.

You will need:

  • Vanilla ice cream
  • Hot Fudge Sauce
  • Peanut Butter Sauce
  • Whipped cream
  • Snack-type peanuts, coarsely chopped
  • Maraschino cherries

Top the ice cream with Hot Fudge Sauce and Peanut Butter Sauce. Load on some whipped cream. Top it with nuts and a cherry.

1/2 cup milk
1/4 cup peanut butter

  2. In a medium bowl, mix the flour, sugar, cocoa, and baking powder together. Add the oil, milk, and peanut butter and mix until combined. Scrape the batter into an ungreased 8 x 8-inch baking pan.
  3. Pour the hot sauce mixture over the batter. Place the pan in the oven and bake for 35 minutes or until a toothpick inserted in the cake comes out clean. Cool in the pan on a rack.

Serving suggestion

This is a favorite of kids and chocolate lovers. Serve it hot with a scoop of vanilla ice cream. Either drizzle chocolate over the ice cream or pudding sauce from the cake. Top with chopped peanuts and a cherry.

Enjoy your special treats!
